DV8 MagazineBorn in Nha Trang, Nhi Mundy grew up working at her mother’s Vietnamese restaurant in the Midwest. It was then that she learned how to roll the perfect summer roll, how to sear a pork chop and how to assemble a beautiful bowl of noodles. Her mother taught her how to cook and instilled in her a love of simple, authentic Vietnamese cuisine.

That love lay dormant for years, while Nhi made her way in New York City, studying at the Fashion Institute of Technology and working in the world of public relations and marketing. She met her husband, photographer Michael Mundy, and started a family. After growing up as an immigrant, it felt like she was living the American dream. And then Hurricane Sandy swept through, destroying their apartment in the city and changing everything. They packed up their three children and moved north, taking up residence in their Catskills summer home.

As so often happens when people make this transition, Nhi found herself slowing down and taking better care of herself and her family. It was the food of her childhood that nourished this new life, the kind of light and fresh cuisine that she noticed was missing from restaurants in the area. This inspired her to open the original Bà & Me in Callicoon in 2014. In less than a year, she opened a second location in Honesdale. If there are more down the road, it’s because Nhi would like to make delicious, healthy options more widely available to the people of this region.DV8 MagazineThough the name sounds like banh mi, the classic Vietnamese sandwich, it was actually chosen to honor her family. “Bà” means grandmother in Vietnamese and “Me” means mother. The spirit of family infuses not only the cooking at Nhi’s restaurants but the feeling of community that is an important part of the Bà & Me experience.
